Couple of recipes from my old landlord Lance Southgate

Sponge

6oz Marge
6oz Suger
6oz Self Raising Flour
3 Eggs
Table Spoon of Milk
Mix it up
2 seperate tins Gas Mark 4 for half an hour

Icing

Icing Sugar in cup
Carefully add water whilst mixing until the right consistency is reached

Chocolate Cake

1oz Butter or Marge
2oz Suger
2 level Table Spoons of Golden Syrup
Level Tea Spoon of Bi-Carb
1 Cup of Milk
6oz Self Raising Flour
1oz Cocoa
Cream Fat, Sugar and Syrup
Disolve Bi-Carb and Milk
Sift together Flour, Milk and Cocoa.
Alternately add flour and milk to creamed mixture as if making Batter
Put into 8″ Sandwich cake tin
Gas 4-5 for 40mins

Boiled Fruit Cake

1 Cup Soft Brown Sugar
3 Cups of Mixed Fruit
1 Cup of Milk
1/4lb of Marge
Boil together for 3 minutes then allow to cool
When cold, mix in 2 Cups of Self Raising Flour, 2oz Ground Almonds or Tea Spoon of Almond Essence
Cake tin 8″
Bake for 2 hours at Gas Mark 3
